Our client, a bakery in Nairobi, is seeking to fill the role of a Bakery Manager for a 3-month contract
Roles & Responsibilities:
- Hire, train, schedule, and supervise bakery staff (full-time, STW, and contractual)
- Manage, mentor, and train bakery staff, fostering a collaborative and skilled team
- Formulate a production plan, lead daily bread production, ensuring fulfillment of customers' orders
- Develop and refine bread recipes, ensuring consistent quality and adherence to brand standards
- Oversee the baking process, ensuring consistent quality and adherence to recipes and safety standards.
- Responsible for tracking all raw material & finished goods inventory, ensuring no losses, and equipment operating in a safe condition, adhering to all safety standards, documentation, and
certification - Manage suppliers, source & order ingredients, and minimize waste.
- Execute sales, control costs, and meet/exceed gross and profit margins. Manage cash, establish budget & financial planning goals.
- Handle customer orders, inquiries, and complaints, and ensure a positive customer experience.
- Ensure all baked goods meet the bakery's standards for taste, appearance, and freshness.
- Establish a marketing plan, promote the bakery's products, and increase sales.
- Uphold and enforce strict food safety and sanitation standards, managing
all spot-audits and accreditation requirements - Works closely bakery manager to plan production schedules and achieve business goals
- Seek improvements in baking processes, efficiency, and product offerings
Minimum Requirements:
- Degree/ Diploma in culinary studies, food science, or related field
- 5+ years’ experience in an operating bakery, preferably in a supervisory role, with a strong background in bread baking techniques
- Demonstrated in-depth understanding of baking techniques, ingredients, processing equipment, and dough handling.
- Ability to lead, motivate, and mentor a team effectively.
- Excellent time management and organizational abilities to manage production schedules and inventory.
- Flexibility to work early mornings, weekends, and holidays as needed.
